You’ll get better flavoured bread from a longer, slow rise.
A faster rise will allow you to enjoy your bread that much sooner, but you’ll get better flavour from a longer, slow rise. If you have the time, refrigerate your dough overnight after shaping. The next morning, pull the dough out, let it come to room temperature and finish its rise before baking
